Ample Sound • Knocked out of key - can't get back + Riffer dice issues playing one note lines

I have 2 questions actually -

1. As a keyboard player I'm using MIDI to perform/record parts as notes in Logic. Quite often tinkering around looking for articulations or fx I hit the wrong note (which is some kind of tuning key switch) - and the entire guitar goes out of tune - into another key and remains stuck there. Then all my recorded MIDI is off. (E3 becomes C#3 for example) Is there an escape or reset button to clear this out and get back to the standard correct tuning/key? Very frustrating.
The only way I can find to get it out of there is quit Logic and start again.
Is there a way to disable key switches temporarily while I'm playing notes?

2. In Riffer - I've tried the dice function but it only creates chords and passing notes - zillions of simultaneous notes that sound a mess. I was hoping to make it generate single note lines. I also don't see any other for scales (eg. lydian, blues, tritone etc.) all I see is the list of keys - no scales further down as I saw in one online demo. (v3.7.0) What's going on?
